ABSTRACT

Introducción: Las enfermedades transmitidas por los alimentos es un fenómeno a nivel internacional que provoca cada año miles de enfermos o muertos, con la inclusión de niños y ancianos. La inocuidad de los alimentos es el proceso que garantiza la calidad de estos durante el proceso productivo, almacenamiento y distribución. Evitar afectaciones en este proceso beneficia directamente la calidad de vida sin que represente un riesgo para la salud. Objetivo: Ofrecer acciones en el proceso industrial de la Unidad Empresarial de Base Planta de Leche y sus Derivados, perteneciente a la Empresa Productos Lácteos Guantánamo, que permitan la inocuidad de los productos lácteos a partir de insuficiencias identificadas. Método: Se realizó un estudio cualitativo y cuantitativo en dicha planta en el periodo 2021-2022, donde participaron 43 obreros (N=43) directamente vinculados con el proceso productivo de los productos lácteos. Se aplicaron el cuestionario y la observación participante para la obtención de la información. Se contó, además, con los criterios y opiniones de cuatros directivos y seis especialistas de la entidad. Resultados: Se hallaron limitaciones en la concepción de alternativas que constituyen acciones novedosas para la aplicación en el proceso industrial de resultados de calidad en la inocuidad de los productos lácteos a partir de la obsolescencia de los equipos y los niveles de conocimiento de Regular y Mal en el 100 % de los obreros. Se aplicaron acciones que permitan asegurar la inocuidad. Conclusiones: Las acciones que se presentan satisfacen las limitaciones diagnosticadas, corroborada durante el desempeño laboral para satisfacer las demandas sociales de inocuidad.


Introduction: Foodborne diseases are an international phenomenon that causes thousands of illnesses or deaths every year, including children and the elderly. Food safety is the process that guarantees food quality during the production process, storage and distribution. Avoiding effects in this process directly benefits the quality of life without representing a risk to health. Objective: To offer actions in the industrial process of the Milk and its Derivatives Plant Base Business Unit, belonging to the Productos Lácteos Guantánamo Company, that allow the safety of dairy products based on identified insufficiencies. Method: A qualitative and quantitative study was carried out in said plant in the period 2021-2022, where 43 workers (N=43) directly linked to the production process of dairy products participated. The questionnaire and participant observation were applied to obtain the information. In addition, the criteria and opinions of four directors and six specialists of the entity were included. Results: Limitations were found in the conception of alternatives that constitute novel actions for the application in the industrial process of quality results in the safety of dairy products based on the obsolescence of equipment and the levels of knowledge of Regular and Poor in 100% of the workers. Actions were applied to ensure safety. Conclusions: The actions presented satisfy the diagnosed limitations, corroborated during work performance to satisfy social demands for safety.


Introdução: As doenças transmitidas por alimentos são um fenómeno internacional que causa milhares de doenças ou mortes todos os anos, incluindo crianças e idosos. A segurança alimentar é o processo que garante a qualidade dos alimentos durante o processo de produção, armazenamento e distribuição. Evitar efeitos nesse processo beneficia diretamente a qualidade de vida sem representar risco à saúde. Objetivo: Oferecer ações no processo industrial da Unidad Empresarial de Base Planta de Leche y sus Derivados, pertencente à Empresa Produtos Lácteos Guantánamo, que permitam a segurança de produtos lácteos com base nas insuficiências identificadas. Método: Foi realizado um estudo qualitativo e quantitativo na referida fábrica no período 2021-2022, onde participaram 43 trabalhadores (N=43) ligados diretamente ao processo produtivo de laticínios. O questionário e a observação participante foram aplicados para obtenção das informações. Além disso, foram incluídos os critérios e opiniões de quatro diretores e seis especialistas da entidade. Resultados: Foram encontradas limitações na concepção de alternativas que constituam ações inéditas para a aplicação no processo industrial de resultados de qualidade na segurança de produtos lácteos com base na obsolescência dos equipamentos e nos níveis de conhecimento Regular e Ruim em 100% dos trabalhadores. Ações foram aplicadas para garantir a segurança. Conclusões: As ações apresentadas satisfazem as limitações diagnosticadas, corroboradas durante o desempenho do trabalho para satisfazer as demandas sociais de segurança.

ABSTRACT

Introduction: Osteoporosis is a chronic disease characterized by a decrease in the density of bone mass, making bone more porous, less resistant and of lower quality than normal bone. This leads to the deterioration of its microstructure, making the bone more fragile and therefore increasing the risk of fracture. It has been found that high concentrations of Lactobacillus and Bifidobacterium promote the absorption of minerals such as calcium, magnesium, and phosphorus and thus increase mineral density. Due to the great social and economic impacts of osteoporosis, it is necessary to develop interventions that can be easily adopted at the population level, improving the quality of life of individuals without significantly affecting the health system. Objective: Assessing the impact of increased dairy consumption on the Colombian population diagnosed with osteoporosis between 2015 and 2020 through the simulation of the potential impact fraction (PIF). Methods: Using data from the Integrated Social Protection Information System (SISPRO) and National Nutritional Situation Survey (ENSIN), the incidence, the frequency of milk consumption, the potential impact fraction (PIF), and disability-adjusted life years (DALYs) were estimated. Results: A total of 63,640 cases of osteoporosis were identified. The highest incidence was observed in 2019. Seventeen food groups were identified in the ENSIN, and the most frequent products consumed by respondents over 50 years of age were milk, cheese, and yogurt. The PIF was then analysed, with a calcium intake of 600 mg/ day, and a significant difference in the decrease in the number of cases was observed. In 2019, a higher estimated DALY loss of 9.9 was observed. In women, years of life lost due to fractures were the highest in the 65-69 age group. In men, they were highest in the 75-79 age group. Discussion: We observed that the departments with the highest consumption of dairy products were the capital of the country and regions where dairy products factories are located. It was not possible to establish an association between socioeconomic strata and low dairy intake. Nevertheless, some authors have proposed that westernization of diets and low income reduce access to fresh fruits and milk derivates. Conclusion: Years lost due to disability increased in the population over 60 years of age. In the PIF analysis, a decrease in cases was observed when the population increased consumption of dairy products.


Introducción: La osteoporosis es una enfermedad crónica caracterizada por una disminución de la densidad de la masa ósea que hace que el hueso sea más poroso, menos resistente y de menor calidad que el hueso normal. Esto conduce al deterioro de su microestructura, por lo que el hueso se hace más frágil y, por lo tanto, aumenta el riesgo de fractura. Se ha encontrado que las altas concentraciones de Lactobacillus y Bifidobacterium promueven la absorción de minerales como calcio, magnesio y fósforo y, por lo tanto, aumentan la densidad mineral. Debido a los grandes impactos sociales y económicos de la osteoporosis, es necesario desarrollar intervenciones que puedan ser fácilmente adoptadas a nivel poblacional con el fin de mejorar la calidad de vida de los individuos sin afectar significativamente el sistema de salud. Objetivo: Evaluar el impacto del aumento del consumo de lácteos en la población colombiana con diagnóstico de osteoporosis entre 2015 y 2020 mediante la simulación de la fracción de impacto potencial (PIF). Materiales y métodos: Estudio ecológico realizado en adultos mayores de 50 años con diagnóstico de osteoporosis. A partir de los registros del Sistema Integrado de Información de Protección Social (SISPRO) y la Encuesta Nacional de Situación Nutricional (ENSIN), se estimó la incidencia, la frecuencia de consumo de leche, el PIF y los años de vida ajustados por discapacidad (AVAD). Resultados: Se identificaron un total de 63 640 casos de osteoporosis en SISPRO, la mayor incidencia se observó en 2019. Se establecieron 17 grupos de alimentos en la ENSIN, los productos más frecuentes consumidos en población mayor de 50 años fueron leche, queso y yogur. En el cálculo del PIF se encuentra que con una ingesta de calcio de 600 mg/día se reduciría significativamente el número de casos. En 2019 se observó una mayor pérdida estimada de AVAD de 9,9. En las mujeres, los años de vida perdidos debido a fracturas fueron más altos en el grupo de edad de 65 a 69 años. En los hombres, fue más alta en el grupo de edad de 75-79 años. Discusión: Observamos que los departamentos con mayor consumo de productos lácteos fueron la capital y las regiones donde se encuentran las fábricas de productos lácteos. No fue posible establecer una asociación entre los estratos socioeconómicos y la baja ingesta de lácteos. Sin embargo, algunos autores han propuesto que la occidentalización de las dietas y los bajos ingresos reducen el acceso a frutas frescas y derivados de la leche. Conclusión: Los años perdidos por discapacidad aumentaron en la población mayor de 60 años. En el análisis PIF, se observó una disminución en los casos (reducción de 2329 casos/ año) cuando la población aumentó el consumo de productos lácteos.

ABSTRACT

Background: This research was motivated by the determination of the sanitation schedule in the heat exchanger area for some products (milk, avocado juice, and orange juice), as well as the inconsistency of the results of previous studies related to the chemical composition of the fouling layer. Objectives: a) to test the effect of raw material composition on the chemical composition of the fouling layer. b) to test microbial growth's effect on fouling's chemical composition (protein). Methods: mathematical derivation of the formation process of Resistant Dirt Factor (Rd) in the form of an Equation; ANOVA was used to test the effect of the dependent variable (protein) and predictor (microbial). Results: a) The composition of the raw material strongly influences the chemical composition of the fouling layer; b) There is a strong effect between microbial growth and protein content as a fouling composition (p<0.05). Conclusion: A strong influence between microbial growth and the composition of the fouling layer (protein) can close the research gap related to the inconsistency of previous research results (fouling layer composition), so there is no prolonged debate


Antecedentes: Esta investigación fue motivada por la determinación del cronograma de sanitización en el área del intercambiador de calor para diferentes productos (leche, jugo de aguacate y jugo de naranja), así como la inconsistencia de los resultados de estudios previos relacionados con la composición química de la capa de suciedad. Objetivos: a) probar el efecto de la composición de la materia prima sobre la composición química de la capa de suciedad. b) probar el efecto del crecimiento microbiano en la composición química de la capa de suciedad (proteína). Método: etapas del proceso de formación del Factor de Suciedad Resistente (Rd) en forma de una ecuación; Se usó ANOVA para probar el efecto de la variable dependiente (proteína) y el predictor (microbiano). Resultados: a) La composición química de la capa de incrustación está fuertemente influenciada por la composición de la materia prima; b) Existe un fuerte efecto entre el crecimiento microbiano sobre el contenido de proteína como composición de ensuciamiento (p<0.05). Conclusión: Una fuerte influencia entre el crecimiento microbiano y la composición de la capa de incrustación (proteína) puede cerrar la brecha de investigación relacionada con la inconsistencia de los resultados de investigaciones anteriores (composición de la capa de incrustación) para que no haya un debate prolongado

ABSTRACT

Background It has been reported that a high intake of dairy products might be associated with an increased risk of Parkinson's disease (PD) in foreign studies, but no such study has yet been conducted on prodromal Parkinson's disease (pPD) and the Chinese population. Objective To investigate the prospective relationship between the intake of dairy products and pPD among people aged 55 and above in four provinces of China. Methods The research data were obtained from the baseline 2018 and follow-up 2020 surveys of Community-based Cohort Study on Nervous System Disease. A total of 9984 residents were selected who participated in both waves of surveys and had complete data on demographics, dietary products intake, and risk factors for PD. We evaluated the risk level and the numbers of related risk/prodromal markers of pPD in the participants based on a criteria recommended by the International Parkinson and Movement Disorder Society (MDS). Food Frequency Questionnaire was used to obtain food consumption data in the past 12 months, and the intake of dairy products was calculated and divided into non-consumption and tertiles of consumption (T1, T2, and T3 from low to high). Multiple linear regression was used to analyze the association between baseline dairy intake and risk level of follow-up pPD. Poisson regression and multinomial logit regression models were used to analyze the relationship of baseline dairy products and the number of risk/prodromal markers of follow-up pPD in the population, and multiple logistic regression was used to analyze each risk/prodromal marker of follow-up pPD according to baseline levels of dairy products intake. Results The percentage of residents without dairy products consumption was 58.02% in 2018, and the dairy products intakes were relatively high among residents being female, aged 55 to 74 years, with an education level of middle school and above, with a per capita monthly household income ≥ 1000 yuan, living in urban areas, and without active employment (P<0.05). The median risk level of pPD was 0.74% in 2020, and the proportion of residents with 3 to 5 markers was 66.74%. The multiple linear regression analysis results suggested no association between baseline dairy intake and follow-up risk level of pPD. The Poisson regression model showed that the high dairy products intake group at baseline (T3, median=250.00 g·d−1) was found to be 1.159 (95%CI: 1.065~1.261, Ptrend<0.001) times more likely to have the risk/prodromal markers of pPD at follow-up than non-consumers. When the number of markers was grouped, no statistically significant association was found by multiple logistic regression analysis. Conclusion Although high dairy products intake levels might be associated with pPD risk/prodromal markers among people aged 55 and above in four provinces of China, no direct association is found between dairy products intake and pPD risk levels in this study.

ABSTRACT Objective: The objective of this study was to map and synthesize evidence on the adequacy of dietary calcium intake and dairy products in Brazilian preschoolers and schoolchildren. Data source: Evidence searches were performed in the MEDLINE (via PubMed) and Latin American and Caribbean Health Sciences Literature (LILACS; via BVS) databases, with no restriction on date or language of publication. Experimental or observational studies that evaluated healthy Brazilian children between 2 and 12 incomplete years old were included. Data synthesis: A total of 18 studies were included. Seven of 11 studies of 11 studies (63.6%) identified mean values of dietary calcium intake below the age recommendation, especially in schoolchildren, with the progression of the age group. Among preschoolers, studies with direct weighing of food showed higher mean values of dietary calcium ingested compared to those with dietary recall. Children attending public daycare centers on a part-time basis tended to have inadequate calcium intake. The consumption of milk and dairy products was lower among older children, especially schoolchildren. Conclusions: Inadequate dietary calcium intake seems to be prevalent in Brazil during childhood, especially among schoolchildren. Therefore, the evaluation of milk and dairy products intake must be considered in order to desgn appropriate corrective actions.


RESUMO Objetivo: Mapear e sintetizar as evidências sobre a adequação do consumo de cálcio dietético e laticínios em crianças brasileiras pré-escolares e escolares. Fontes de dados: As buscas pelas evidências foram realizadas nas bases de dados Medical Literature Analysis and Retrieval System Online (Medline, via PubMed) e Literatura Latino-Americana e do Caribe em Ciências da Saúde (Lilacs, via Biblioteca Virtual em Saúde — BVS), sem restrição de data ou idioma de publicação. Foram incluídos estudos experimentais ou observacionais que avaliaram crianças brasileiras saudáveis com idade entre dois e 12 anos incompletos. Síntese dos dados: Foram incluídos 18 estudos. Sete de 11 estudos (63,6%) identificaram valores médios da ingesta de cálcio dietético abaixo do recomendado para a idade, principalmente em escolares, com a progressão da faixa etária. Entre os pré-escolares, estudos com pesagem direta dos alimentos apresentaram maiores valores médios de cálcio dietético ingerido comparados aos obtidos com recordatório alimentar. Crianças frequentadoras de creches públicas em regime de meio período tiveram a maior inadequação da ingesta de cálcio. A ingesta de leite e derivados foi menor entre as crianças com idade mais avançada, principalmente em escolares. Conclusões: A inadequação da ingesta de cálcio dietético parece ser prevalente no Brasil, principalmente em escolares. Sendo assim, a avaliação da ingestão de leite e derivados é um ponto a ser observado para a realização de ações corretivas nessa faixa etária.

ABSTRACT

O presente artigo teve como objetivo traçar o perfil do consumidor do leite de cabra e seus derivados, especialmente quanto à frequência e razão do consumo desses produtos. Foi realiada uma survey utilizando um questionário, com perguntas abertas e fechadas, enviado por meio eletrônico no sistema bola de neve. O questionário foi respondido por 372 pessoas, sendo 212 (57%) destas já consumiram algum derivado de leite caprino. A maioria dos respondentes era do sexo feminino (68,5%) e idade até 24 anos (68,5%). A escolaridade variou de ensino fundamental à pós-graduação, sendo que o ensino superior incompleto ou completo e pós-graduação representam cerca de 80% dos respondentes e cerca de 54% possuem renda até 3 salários-mínimos. Queijos (>60%) e leite em pó (16%) são os produtos com maior e menor consumo, respectivamente, sendo a aquisição dos produtos é realizada, preferencialmente, em super e hipermercados. Entre os motivos para consumo dos produtos estão o sabor, curiosidade, ser saudável, possuir mais vitaminas, fatores nutricionais e funcionais, qualidade e indicação médica. O consumo diário de produtos de origem caprina ainda é baixo, sendo necessária a desmistificação quanto ao sabor destes produtos e a divulgação de suas características nutricionais


This article aims to outline the consumer's profile of goat's milk and its derivatives, especially regarding the frequency and reason for the consumption of these products. A survey was carried out using a questionnaire, with open and closed questions, sent electronically in the snowball system. The questionnaire was answered by 372 people, 212 (57%) of whom have already consumed some goat's milk derivative. Most respondents were female (68.5%) and age (68.5%) up to 24 years old. Education ranged from elementary to post-graduate, with incomplete or complete higher education and post-graduate education accounting for about 80% of respondents and about 54% earning up to 3 minimum wages. Cheese (> 60%) and powdered milk (16%) are the products with the highest and lowest consumption, respectively, with the products being purchased, preferably, in super and hypermarkets. Among the reasons for consuming the products are the taste, curiosity, being healthy, having more vitamins, nutritional and functional factors, quality, and medical indication. The daily consumption of goat's products is still low, and it is necessary to demystify the flavor of these products and publicize their nutritional characteristics

ABSTRACTS Introduction: Milk and dairy products are nutritious and can play a significant role in a healthy diet. The safety of milk decreases with increasing concentration of arsenic. The Maximum Residue Limits of arsenic is 500 parts per billion (ppb). Objectives: To evaluate the status of arsenic contamination of milk and dairy products produced and processed in some provinces and cities of Vietnam. Methods: A total of 367 samples were tested. Samples were digested before analysis to remove organic compounds, and the total arsenic content determined by atomic absorption spectrophotometry. Results: The average concentrations of total arsenic in liquid milk were 139.32 ppb; in yogurt, 169.81 ppb; in cheese, 221.38 ppb; in milk cake, 232.80 ppb; and in milk powder, 35.43 ppb, respectively. Conclusion: The arsenic concentrations in some samples are higher than the maximum permitted levels according to national regulations.


RESUMEN Introducción: La leche y los productos lácteos son nutritivos y pueden desempeñar un papel importante en una dieta saludable. La seguridad de la leche disminuye con el aumento de la concentración de arsénico. Los límites máximos de residuos de arsénico son 500 ppb. Objetivos: Evaluar el estado de contaminación por arsénico de la leche y los productos lácteos producidos y procesados ​​en algunas provincias y ciudades de Vietnam. Métodos: Se analizaron un total de 367 muestras. Las muestras se digirieron antes del análisis, para eliminar los compuestos orgánicos y se determinó el contenido total de arsénico mediante espectrofotometría de absorción atómica. Resultados: Las concentraciones promedio de arsénico total en la leche líquida fueron 139,32 ppb; en el yogur, 169,81 ppb; en el queso, 221,38 ppb; en el pastel de leche, 232,80 ppb; y en la leche en polvo, 35,43 ppb, respectivamente. Conclusión: Las concentraciones de arsénico en algunas muestras superan los niveles máximos permitidos según la normativa nacional.

Objective@#To investigate the intake of liquid dairy products and identify its influencing factors among the fourth grade students in Nanjing City. @*Methods@#The fourth grade students were selected as the study subjects in Nanjing City using a multi-stage random cluster sampling method in September 2020. Their general information, frequency of liquid dairy product intake one week prior to survey and mean intake amount per time were collected. According to the 2016 Dietary Guidelines for Chinese Residents, weekly intake of liquid dairy products of 2 100 g and greater was defined eligible. Factors affecting the frequency and amount of liquid dairy product intake were identified using multivariable logistic regression analysis.@*Results@#A total of 2 268 questionnaires were allocated and 2 216 valid questionnaires were recovered, with an effective recovery rate of 97.71%. The respondents included 1 199 boys ( 54.11% ) and 1 017 girls ( 45.89% ). The frequency of liquid dairy product intake was (6.41±4.86) times per week, and the median intake amount was 1 250.00 g per week (interquartile range, 1 750.00 g per week). There were 607 students ( 27.39% ) consuming liquid dairy products of 2 100 g and greater a week, and 1 016 students ( 45.85% ) consumed liquid dairy products for 7 times and more a week. Multivariable logistic regression analysis showed that living in urban areas ( OR=1.204, 95%CI: 1.005-1.443 ), knowing nutrition labels ( OR=1.221, 95%CI: 1.021-1.460 ), periodical measurement of body weight (OR=1.486, 95%CI: 1.098-2.011) and restricted intake of sugar-containing drinks ( OR=1.264, 95%CI: 1.005-1.590 ) facilitated the intake of liquid dairy products for 7 times and more a week, and students with periodical measurement of body weight were more likely to consume liquid dairy products for 2 100 g and greater a week ( OR=1.821, 95%CI: 1.240-2.676 ).@*Conclusions@#Inadequate intake of liquid dairy products is found among the fourth grade students in Nanjing City. Residence, awareness of nutrition labels, periodical measurement of body weight, and parental restriction of sugar-containing drink intake affect the intake of liquid dairy products.

ABSTRACT

Abstract Mastitis is the most common disease in dairy herds and the main cause of economic losses in milk production worldwide. This inflammatory reaction of the mammary gland affects the quantity, composition and quality of milk produced and its suitability for the dairy industry. Despite of its importance, Colombia has no regulations on somatic cell count (SCC); that is, no official upper limits have been established for the dairy industry. The current quality-based payment system for raw milk does not encourage local producers to reduce the level of somatic cells. Consequently, Colombia is at a disadvantage compared to countries that include this parameter in their payment schemes and subscribe to international free trade agreements, affecting the competitiveness of the Colombian dairy sector. This article reviews the types of somatic cells, the microbiology of mastitis, its etiology and diagnosis, the changes that generate the composition of milk, and the impact of high SCCs on the quality of dairy products, such as yogurt, cheese, and milk powder. The final section offers a reflection on the problem of high SCCs in Colombia and the lack of regulations in this regard.


Resumen La mastitis es la enfermedad más frecuente en los hatos lecheros y es la principal causa de pérdidas económicas en la producción de leche alrededor del mundo. Esta reacción inflamatoria de la glándula mamaria afecta la cantidad, composición, calidad y aptitud de la leche para procesamiento por la industria. Sin embargo, en Colombia no existe normatividad sobre el recuento de células somáticas, principal indicador de mastitis; es decir, no existen límites oficiales que sirvan de referencia para la industria lechera. El sistema de pago basado en calidad no incentiva al productor a disminuir el nivel de células somáticas. Esto coloca al país en desventaja frente a otros países que exigen este parámetro en su esquema de pago y con los cuales Colombia tiene tratados de libre comercio, afectando negativamente la competitividad del sector lechero colombiano. En este artículo se hace una revisión sobre los tipos de células somáticas, la microbiología de la mastitis, su etiología, el diagnóstico, los cambios que generan la composición de la leche y el impacto que tienen los altos recuentos de células somáticas sobre la calidad de algunos derivados lácteos como yogures, quesos y leche en polvo. En la parte final se presenta una reflexión sobre la problemática de los altos recuentos de células somáticas en Colombia y la falta de normatividad al respecto.


Resumo A mastite é a doença mais frequente nos rebanhos leiteiros e é a principal causa de perdas econômicas na produção de leite em todo o mundo. Essa reação inflamatória da glândula mamária causa efeitos na quantidade, composição, qualidade e aptidão de leite processado pela indústria. No entanto, na Colômbia, não há regulamentação sobre a contagem de células somáticas até o momento, o principal indicador de mastite, ou seja, não há limites oficiais que sejam referência para a indústria leiteira. O sistema de pagamento baseado na qualidade não incentiva o produtor a diminuir o nível de células somáticas. Isso coloca o país em desvantagem em comparação com outros países que exigem esse parâmetro em seu esquema de pagamento e com quem a Colômbia possui acordos de livre comércio, afetando negativamente a competitividade do setor. Este documento analisa os tipos de células somáticas, a microbiologia da mastite, sua etiologia, diagnóstico, alterações na composição do leite e o impacto da alta contagem de células somáticas na qualidade do leite. Alguns derivados de leite, como iogurtes, queijos e leite em pó. Na parte final, é feita uma reflexão sobre o problema da alta contagem de células somáticas na Colômbia e a falta de regulamentação nesse sentido.

RESUMEN El cáncer colorrectal (CCR) es una de las neoplasias más frecuentes y representa una de las principales causas de muerte por cáncer en todo el mundo. Existen fuertes evidencias que factores dietarios influyen en su incidencia. Los lácteos han sido incorporados en numerosas guías nutricionales como parte de una dieta saludable; numerosos estudios han reportado un efecto protector entre el consumo de lácteos y el riesgo de cáncer colorrectal, presuntamente por su contenido de calcio (Ca); sin embargo, la evidencia es inconsistente. Objetivo: Evaluar la evidencia científica actual sobre la relación entre el consumo de lácteos y el riesgo de cáncer colorrectal. Metodología: Se realizó una búsqueda sensible en las bases de datos de PudMed, limitándose a artículos en inglés desde el 2014 hasta el 2019, priorizando estudios de cohorte y caso-control con exposición a productos lácteos como leche, yogurt, mantequilla y/o queso. Se encontró una asociación inversa significativa entre el consumo de productos lácteos totales y el riesgo de cáncer colorrectal. Con relación al calcio proveniente de los lácteos los resultados son inconsistentes. Solo la leche, como lácteo específico, mostró un efecto protector pero no discrimina según el contenido de grasa. La mayor ingesta de productos lácteos totales, la leche y el calcio están asociados con una disminución del riesgo de cáncer colorrectal.


ABSTRACT Colorectal cancer (CRC) is one of the most common malignancies and represents one of the leading causes of cancer death worldwide. There is strong evidence that dietary factors influence CRC incidence. Dairy products have been incorporated into nutritional guidelines as part of a healthy diet; many studies have reported a protective effect between dairy consumption and the risk of colorectal cancer, presumably because of its calcium (Ca) content; however, the evidence is inconsistent. Objective: To evaluate the current scientific evidence on the relationship between dairy consumption and the risk of colorectal cancer. Methodology: A literature search was conducted in the PudMed databases, limited to articles written in English and published between 2014 and November 2019, prioritizing cohort and case-control studies with exposure to dairy products such as milk, yogurt, butter and/or cheese. Results: A significant inverse association was found between the consumption of total dairy products and risk of colorectal cancer. In relation to calcium from dairy products, results are inconsistent. Only milk, as a specific dairy product, showed a protective effect, with no difference by fat content. Conclusions: Increased intake of total dairy products, milk and calcium are associated with a decreased risk of colorectal cancer.

RESUMEN La elaboración de biopelículas con propiedades bioactivas es un área interesante en el campo de los empaques alimentarios. El objetivo de este estudio fue obtener biopelículas activas (BPA) a base de extracto acuoso de hojas de Gliricidia sepium y determinar su efecto en la vida útil microbiológica del queso costeño. Para la fabricación de las BPA, el extracto acuoso fue microencapsulado, mediante gelación iónica y, posteriormente, incorporado en las biopelículas. La determinación de la vida útil de muestras de queso costeño, se llevó a cabo mediante microbiología predictiva, utilizando el modelo de Monod Hinshelwood. Las microcápsulas utilizadas tuvieron un diámetro promedio de 273,786µm. Los resultados mostraron un aumento en la vida útil microbiológica de 26,7 días, en quesos con BPA, almacenado a 7°C, en comparación con una muestra control (sin BPA), confirmando que las BPA investigadas ejercen un efecto inhibitorio sobre los microorganismos, causantes de deterioro en quesos. Por tal motivo, la metodología aquí planteada puede ser una alternativa en la conservación de un producto perecedero, como el queso costeño.


ABSTRACT The elaboration of biofilms with bioactive properties is an interesting area in the field of food packaging. The aim of this study was to obtain active biofilms (AB) based on aqueous extract of Gliricidia sepium leaves and determine their effect on the microbiological shelf life of coastal cheese. For the manufacture of the AB, the aqueous extract was microencapsulated by means of ionic gelation and later incorporated in the biofilms. The coastal cheese's shelf life was carried out by means of predictive microbiology using the Monod Hinshelwood model. The microcapsules had an average diameter of 273.786µm. The results showed an increase in the microbiological shelf life of 26.7 days in cheeses with AB stored at 7°C compared with control sample (without AB) confirming that the AB investigated exerts an inhibitory effect on the microorganisms causing deterioration in cheeses. For this reason, the methodology proposed here can be an alternative in the conservation of a perishable product such as coastal cheese.

ABSTRACT: Buffalo milk is rich in nutrients and can serve as a substrate for the proliferation of microorganisms. Thus, the objective of the present study was to evaluate the growth kinetics of Salmonella Typhimurium and Listeria monocytogenes in buffalo milk under different processing and storage conditions. Samples of raw and pasteurized milk were inoculated with 1 CFU of each bacterium, separately and together, per 25 mL. After contamination, samples were stored at 8 °C or 37 °C, and bacterial counts were performed at 24, 48, and 168 h. In addition, the accompanying microbiota growth, pH, and the effect of these variables on the growth kinetics of microorganisms were monitored. The pathogens tested were able to proliferate under most conditions tested, reaching high titers throughout the experimental period. At 37 °C, there was a decrease in pH and an increase in the accompanying microbiota that interfered with the microbial growth curve. It was also observed that pasteurized milk subjected to 8 °C provided better conditions for the multiplication of bacteria. Therefore, it was concluded that care throughout the production chain, storage, and commercialization of milk must be adopted to guarantee the microbiological safety of this food.


RESUMO: O leite bubalino é rico em nutrientes e pode servir de substrato para a proliferação de micro-organismos. Assim, o objetivo do presente estudo foi avaliar a cinética de crescimento de Salmonella Typhimurium e Listeria monocytogenes em leite bubalino, em diferentes condições de processamento e armazenamento. Para isso, utilizaram-se amostras de leite cru e pasteurizado, que foram inoculadas com 1 UFC/25 mL de cada bactéria separadamente e em conjunto. Após a contaminação, as amostras foram armazenadas nas temperaturas de 8 ºC e 37 ºC e realizadas contagens bacterianas em 24, 48 e 168h. Além disso, foi acompanhado o crescimento da microbiota acompanhante, o pH e o efeito dessas variáveis sobre a cinética de crescimento dos micro-organismos. Os patógenos testados conseguiram se proliferar na maioria das condições testadas, atingindo altos títulos durante todo o período experimental. Na temperatura de 37 ºC, houve uma diminuição do pH e um aumento da microbiota acompanhante, o que interferiu na curva de crescimento microbiana. Observou-se também que o leite pasteurizado e submetido a 8 ºC possibilitou melhores condições para a multiplicação das bactérias. Sendo assim, concluiu-se que cuidados durante toda a cadeia de produção, armazenamento e comercialização do leite devem ser adotados para garantir a segurança microbiológica desse alimento.

ABSTRACT

Objective @#To understand the current situation and influencing factors of milk and dairy intake among primary and middle school students in Tongzhou District, Beijing, so as to provide the reference for the intervention of milk and dairy intake among primary and middle school students.@*Methods@#The stratified cluster sampling method was used to randomly select the students from the third to sixth grades of primary school, three grades of junior middle school and three grades of senior high school from downtown and township of Tongzhou District as the survey objects. The demographic information, family data, and milk and dairy intake of a week before were collected. Taking the average daily intake of 300 g milk and dairy as the standard (the Chinese Dietary Guidelines 2016), the multivariate logistic regression model was used to analyze the influencing factors for reaching the standard of average daily milk and dairy intake among the students. @*Results@#A total of 804 questionnaires were sent out, and 771 valid questionnaires were received, with a recovery rate of 95.90%. There were 321 primary school students, accounting for 41.63%; 228 junior high school students, accounting for 29.57%; and 222 high school students, accounting for 28.80%. The intake rate of milk and dairy products was 90.92%, and the adverse reaction rate was 10.12%. The daily intake rate was 36.71%. The median daily intake was 214.29 g, and the rate of average daily intake reaching the standard was 28.02%. The multivariate logistic regression results showed that primary school students (OR=1.672, 95%CI: 1.102-2.535), middle school students (OR=2.086, 95%CI: 1.349-3.225), overweight (OR=1.747, 95%CI: 1.131-2.700), obesity (OR=2.469, 95%CI: 1.698-3.591), and parents with bachelor's degree or above (OR=1.760, 95%CI: 1.022-3.029) were the influencing factors for reaching the standard of average daily milk and dairy intake among the students.@*Conclusions@#The average daily intake of milk and dairy products of primary and middle school students in Tongzhou District does not reach the recommended standard, and grade, body mass index and parents'education level were the influencing factors.

ABSTRACT The aim of this study was to develop and evaluate the antioxidant characteristics and sensory acceptance of Greek yogurt with added whole sorghum flours (WSF) from genotypes BRS305 (tannin) and BR501 (tannin-free). Five formulations were elaborated: 1) Control (without WSF); 2) 2% BR501; 3) 4% BR501; 4) 2% BRS305 and 5) 4% BRS305 and evaluated for antioxidant capacity, total anthocyanins, total phenols, condensed tannins, sensory acceptance and purchase intention. The 4% BRS305 formulation presented higher antioxidant properties, but lower sensory acceptance. No significant difference was observed for: color, flavor and overall acceptability between the control and 2% BR501; nor for texture and overall acceptability between the control and 4% BR501. Principal component analysis explained that all variables associated with antioxidant properties were positively correlated with the first major component (PC1: 82.7%). The 2% and 4% BR501 formulations were more highly correlated with PC1 (92.7%), as well as the control in relation to sensorial characteristics. The addition of WSF BRS305 improved the antioxidant properties of yogurts and the addition of WSF BR501 did not interfere with the sensory acceptance of the formulations. The similarity of the sensory acceptance of the yogurt containing WSF from the BR 501 genotype to the control, opens perspectives for the insertion of sorghum in human food, using dairy products as suitable matrices, adding potential functionality to this type of product.


RESUMEN El trabajo tuvo como propósito desarrollar y evaluar las características antioxidantes y la aceptación sensorial de yogurt griego con adición de harinas integrales de sorgo (HIS) de los genotipos BRS305 (con taninos) y BR501 (sin taninos). Cinco formulaciones fueron elaboradas: 1) Control (sin HIS); 2) 2% BR501; 3) 4% BR501; 4) 2% BRS305 y 5) 4% BRS305. Las formulaciones fueron evaluadas en función de su actividad antioxidante, antocianinas totales, fenólicos totales, taninos condensados, aceptación sensorial e intención de compra. La formulación 4% BRS305 presentó más propiedades antioxidantes, pero menor aceptación sensorial que las otras formulaciones. No se observó diferencia significativa entre el control y el 2% BR501 para el color, sabor e impresión global, ni tampoco para textura e impresión global en relación al 4% BR501. El análisis de componente principal ha explicado que todas las variables asociadas a las propiedades antioxidantes han sido positivamente correlacionadas con el primer componente principal (PC1: 82,7%). Las formulaciones 2% y 4% BR501 se han correlacionado más con el PC1 (92,7%), así como el control con las características sensoriales. La adición de HIS BRS305 ha mejorado las propiedades antioxidantes de los yogurts y la adición de HIS BR501 no ha interferido en la aceptación sensorial de las formulaciones. La similitud de la aceptación sensorial del yogurt que contiene el HIS del genotipo BR501 con el control, abre perspectivas para la inserción del sorgo en la alimentación humana, utilizando productos lácteos como matrices adecuadas, agregando funcionalidad potencial a este tipo de producto.

Dulce de leche is the product obtained by concentrating milk and adding sucrose. This sweet can be contaminated by improper practices during the manufacturing process, or in the consumer's home. If manipulation is not performed in a hygienic manner the dulce de leche can be a vehicle of pathogenic bacteria, like some strains of Escherichia coli, to man. The aim of this paper was evaluate the survival capacity and the fate of Escherichia coli Enteroinvasive, Enteropathogenic and Enterohemorrhagic in pasty dulce de leche. Aliquots of this sweet were experimentally contaminated with these pathogenic microorganisms at 102bacterial cells per gram, and later analyzed to evaluate microorganism count after storage for 0, 1, 2, 3, 5, 10, 20 and 30 days. EIEC could be recovered up to 20 days post inoculation in one of the reps, count EIEC on the third day reached 1,500 MPN per g. The strains of EPEC and EHEC, did not show growth, as EIEC, therefore, seem to be more sensitive to the adversities of the medium. The survival of pathogens for long periods in this food highlights the need for strict care in the manufacture and handling of dulce de leche.


O doce de leite é um alimento obtido por concentração do leite adicionado de sacarose. Este alimento pode ser contaminado por práticas inadequadas durante o processamento. Caso a manipulação não seja realizada de maneira higiênica o alimento pode ser veículo de bactérias patogênicas, como algumas cepas de Escherichia coli, para o homem. O objetivo desse trabalho foi avaliar a capacidade de sobrevivência e o comportamento de EIEC, EPEC e EHEC em doce de leite pastoso. Alíquotas deste doce foram experimentalmente contaminadas com esse micro-organismo patogênico na concentração 102 células por grama e posteriormente analisados para avaliar a contagem bacteriana após 0, 1, 2, 3, 5, 10, 20 e 30 dias de estocagem. EIEC pôde ser recuperada até 20 dias após a inoculação em duas das três repetições. Em uma das repetições, a contagem de EIEC no terceiro dia atingiu 1.500 NMP por g. As cepas de EPEC e EHEC, não apresentaram crescimento, como EIEC, portanto, parecerem ser mais sensíveis às adversidades do meio. A sobrevivência desses patógenos durante dias neste alimento evidencia a necessidade de rigorosos cuidados na fabricação e manuseio do doce de leite pastoso.

ABSTRACT

Anormalidades lipídicas e inflamação sistêmica subclínica estão associadas ao processo de aterosclerose, sendo utilizadas como marcadores de risco cardiovascular. Estudos sugerem um possível efeito benéfico dos produtos lácteos na saúde cardiovascular, mas os resultados em marcadores lipídicos e inflamatórios ainda são controversos. O objetivo deste trabalho foi avaliar a associação entre o consumo de produtos lácteos e seus diferentes subgrupos e proteína C-reativa (PCR), LDL-colesterol (LDL-C) e razão triglicerídeo/HDL-colesterol (TG/HDL-C) nos participantes do Estudo Longitudinal de Saúde do Adulto (ELSA-Brasil) (n = 9.372). O consumo de lácteos foi avaliado por meio de questionário de frequência alimentar validado e apresentado em porções/dia. O consumo total de lácteos foi descrito em quatro categorias (≤ 1 porção/dia a > 4 porções/dia). As associações foram estimadas por meio do odds ratios (OR), utilizando-se o grupo de menor consumo (≤ 1 porção/dia) como referência. Os menores valores de OR para TG/HDL-C no modelo multivariado (0,70; IC95%: 0,55-0,90 em homens; e 0,55; IC95%: 0,43-0,70 em mulheres) foram encontrados no grupo com consumo > 4 porções/dia de lácteos totais. Esses resultados foram apoiados pelas associações inversas encontradas entre diferentes subgrupos de lácteos e a razão TG/HDL-C. Não foi encontrada associação entre consumo de produtos lácteos e seus subgrupos e valores de LDL-C e de PCR. Os resultados sugerem um possível efeito benéfico dos lácteos no perfil lipídico, porém são necessárias evidências de estudos longitudinais e de intervenção que elucidem os mecanismos de efeito dos diferentes tipos de lácteos.


Lipid abnormalities and subclinical systemic inflammation are associated with atherosclerosis and are used as markers of cardiovascular risk. Studies have suggested a possible beneficial effect of dairy products on cardiovascular health, but the results in lipid and inflammatory markers are still controversial. This study aimed to assess the association between consumption of dairy products and their different subgroups and C-reactive protein (CRP), LDL-cholesterol (LDL-C), and triglyceride/HDL-cholesterol ratio (TG/HDL-C) in participants in the Longitudinal Study of Adult Health (ELSA-Brasil) (n = 9,372). Consumption of dairy products was assessed via a validated food frequency questionnaire and expressed as servings/day. Total consumption of dairy products was described in four categories (≤ 1 serving/day to > 4 servings/day). The associations were estimated via odds ratios (OR), using the group with the lowest consumption (≤ 1 serving/day) as the reference. The lowest ORs for TG/HDL-C in the multivariate model (0.70; 95%CI: 0.55-0.90 in men; and 0.55; 95%CI: 0.43-0.70 in women) were found in the group that consumed > 4 servings day of dairy products. These results were supported by the inverse associations between different subgroups of dairy products and the TG/HDL-C ratio. No association was found between consumption of dairy products and their subgroups and LDL-C and CRP. The results suggest a possible beneficial effect of dairy products on lipid profile, but longitudinal and intervention studies are needed to elucidate the effect mechanisms of different types of dairy products.

El objetivo de este estudio fue evaluar la asociación entre el consumo de productos lácteos y sus diferentes subgrupos y proteína C-reativa (PCR), LDL-colesterol (LDL-C) y razón triglicéridos/HDL-colesterol (TG/HDL-C) en los participantes del Estudio Longitudinal de Salud del Adulto (ELSA-Brasil) (n = 9.372). El consumo de lácteos fue evaluado mediante un cuestionario de frecuencia alimentaria validado, y presentado en porciones/día. BACKGROUND/OBJECTIVES: Hypertriglyceridemia may be a more important predictor of cardiovascular disease in Asian population consuming carbohydrate-rich foods than in Western populations. Dairy products are known to play a beneficial role in obesity, dyslipidemia, and metabolic syndrome, but the results vary depending on gender and obesity. In this study, we investigated the associations between dairy product intake and hypertriglyceridemia in Korean adults.SUBJECTS/METHODS: The participants were selected from the Korea National Health and Nutrition Examination Survey 2007–2012 (KNHANES IV and V). A total of 22,836 participants aged 19–64 years were included in the analysis. A food frequency questionnaire used to determine the frequency of consumption of products (milk and yogurt). Multivariable logistic regression was used to assess the associations between dairy product intake and hypertriglyceridemia.RESULTS: A significantly decreased risk of hypertriglyceridemia was detected in the highest dairy product intake frequency group (≥ 1 time/day) (odd ratio [OR] = 0.79; 95% confidence interval [CI] 0.64–0.97, P for trend = 0.022) compared to that for the lowest dairy product intake frequency group. Among obese participants, the group with the highest intakes of milk (in men, OR = 0.64; 95% CI: 0.46–0.91, P for trend = 0.036) and yogurt (in women; OR = 0.53; 95% CI: 0.29–0.94, P for trend = 0.019) showed inverse associations with hypertriglyceridemia. No associations were detected in normal weight participants.CONCLUSION: The association between dairy product intake and hypertriglyceridemia differed by gender and obesity status. Further prospective studies are needed to confirm these associations.

ABSTRACT

@#This study determines the association between osteoporosis knowledge, health belief and calcium intake behaviour among students in a medical sciences university. Methods This study was conducted using cross sectional design. Malaysian students, aged 18 to 40 were selected using stratified randomisation method. The osteoporosis knowledge, health belief and calcium intake behaviour of participants were obtained through a validated questionnaire. Results The response rate of the study was 93.0% (n=333). More than 80% of participants had been exposed to information related to osteoporosis knowledge and calcium-rich foods. The mean score of osteoporosis knowledge test (OKT)= 50.4±6.48, perceived susceptibility= 14.2±4.02, perceived seriousness= 20.4±4.67, perceived benefits of calcium= 23.1±3.94, perceived barriers to calcium= 14.4±3.99 and health motivation= 21.6±3.79. Only 37.8% of participants consumed adequate dairy products. There were significant correlations between OKT and perceived benefits of calcium (r=0.127, p=0.020), perceived barriers to calcium (r=-0.208, p<0.001) and health motivation (r=0.173, p=0.002). Perceived seriousness to osteoporosis, health motivation and OKT significantly predicted intake of dairy products (p<0.001). Conclusions The osteoporosis knowledge was moderate, health belief was moderate and consumption of dairy products was low. The osteoporosis knowledge and health belief were correlated but not the behaviour of dairy products consumption. Young adults had moderate osteoporosis knowledge and consumption of dairy products was low. Future educational programme should focus on osteoporosis knowledge, health belief as well as determining factors that influence behaviour of consumption of dairy products.

@#To investigate the current status of milk and dairy product intake of primary and middle school students in Guangzhou and to explore the influencing factors, to provide the basis for promoting the consumption of milk and dairy products for students.@*Methods@#Questionnaire survey was conducted among 7 948 students selected from 3 primary schools and 3 middle schools in Guangzhou. The contents included general information, average amount of the intake of milk and dairy products (including pure milk, yoghurt, milk powder, cheese and other dairy products). Using χ2 test and multivariate Logistic regression to analyze the influencing factors of students’ milk and dairy product intake.@*Results@#About 76.12% of all participants reported milk and dairy products intake<7 times/week, 78.88% reported milk and dairy products intake<300 g/d and the median of milk and dairy products was 178.57 g/d. In the multiple Logistic regression model, girls and high school students were more likely to consume milk and dairy products insufficiently, with the OR of 1.42 (95%CI=1.26-1.60), 1.86 (95%CI=1.51-2.28) respectively. The students with father’s education level being college degree or above (OR= 0.75, 95%CI=0.59-0.94), mother’s education level being high school or above (high school:OR=0.75, 95%CI=0.61-0.93, college degree or above:OR=0.58, 95%CI=0.46-0.72) and annual household income ≥200 000 (OR=0.77,95%CI=0.64-0.92) were more likely to consume sufficient milk and dairy products.@*Conclusion@#Consumption of milk and dairy products among primary and middle school students in Guangzhou was high but not meet the recommended amount,should be strengthened. Health and nutritional education for students and their parents,especially girls and senior students,should be strengthened to promote the milk and dairy products consumption.
